鯛茶漬け、大好きです。最初にかんどうしたのは銀座の「うち山」でした。そして「あさみ」、「徳うち山」「金田中 庵」「竹葉亭」「嘉祥」。「うち山」と関係の深いお店が多いですが、どこも変わらないのは鯛にからめているのは胡麻だれだということです。
胡麻だれのコクの深みや味のバランスが違うし、鯛の厚みや切り方が違って、総合的な味の印象も変わってきます。どこも大好きなんですが。
でも、これまでの鯛茶と違って、こちらの「鯛茶漬け膳」（税込み１６５０円）は胡麻だれではなく、胡麻味噌をからめています。味噌だからよく絡む。味噌の旨味と胡麻の香りが相まってコクが加わるのですが、かといってくどくない。どちらかといえば食べた後はあっさりした感じがします。鯛は厚すぎず薄すぎず、ほかの名店の中間くらい。弾力ととろみのある舌触りがとてもいい。量も多い。
これを載せるご飯の硬さもほどよくて、胡麻味噌の鯛茶のファンになりました。
小鉢でついてくるお浸しも出汁のぐあいが絶妙だし、温泉卵もうまい。漬物も昆布だしをかけた茶漬けの合間に食べるのにちょうどいい。きなこをかけたデザートも甘さが食後の一口用にぴったりです。
どれもこれも美味しかった。何度でも食べたい。
