店員さんが炭の上に何やら珍しい形の鉄板を乗せ、周りに野菜を敷き詰めてくれます。
この鉄板にぢどりをのせ、じっくりと脂を落とすと、カリカリの焼きぢどりができあがります。少し塩をつけるととても美味しくいただけます。脂を吸った野菜も美味しいですね。
鍋には黄金色のスープが満たされています。穴の空いたレンゲでぢどりをしゃぶしゃぶして食べます。水炊き？しゃぶしゃぶ？不思議です。塩味のままでも良いですが、途中でポン酢や柚子胡椒で味変するとさらに進みますね。雑炊がメチャメチャ美味しかったです。
お持ち帰りのおにぎり美味しかった。
