東京赤坂、裏路地に入ると数十メートル先にお店「神戸牛懐石511」に繋がる入口が見えます。
お店は地下にあり階段を下りると重厚な扉、高級感のある店内は意外に広く７０席ある。
神戸牛は松坂牛や近江牛と同じで素牛（ルーツ）は「但馬牛」
日本が誇る最高峰の和牛と言えよう。
店名「神戸牛懐石511」の「５１１」は牛肉の肉質等級を表す（Ａ5）と脂肪交雑などを評価する為のBMS１１等級以上の牛肉を使用していることを表している。
しかしＡ5の11等級の牛肉は簡単には手に入らない事から、このお店の凄さを感じる。
そんなお店の神戸牛を使ったハンバーグが１５００円で食べられると知って伺いました。

大きさは１５０グラム強。
デミグラスと和風が選べるのですが、撚り、肉を味わいたいので和風にしようかと思いましたが、それ以上にデミグラスの味も気になったのでデミグラスを注文。
神戸牛といっても勿論ステーキの切り落としでしょうが、肉の上品な柔らかさ、口の中でとろける良質な脂から滲むジューシーさ、デミグラスソースが絡む芳醇な旨みは至極の旨さと言っても言い過ぎではない。
これを１５００円で食させる店の努力に感謝☆
今度はステーキを食べに伺いたいと思います。
