まず、
自家製の生ハムは
プロシュートというよりむしろ
グアンチアーレっぽく脂肪が多い部分です。
脂肪の甘み、肉の旨みも十分、
塩加減及びハーブの配分も完璧。
何枚でも食べれます。
イタリアに住んでた時に
よく肉屋でグアンチアーレとか買ってましたが
品質的にこっちの方が上かも。
パスタもバランスは最高にいいですね。
本場の赤身肉が多い感じで、トマトソースが少ないラグー
パスタとの絡みも抜群です。
ステーキに関しても
火入れ加減が抜群。
塩加減も軽めで引き立つ肉の旨み。
ドルチェは
下にミントのゼリーが引かれていて爽やかな感じになってましたが
僕としては、もっと濃厚にして
最後エスプレッソで洗い流したい感じで
ちょっと消化不良感はありますが、
ては相当込んだドルチェです。
モンテビアンコ自体は美味しいですし、
作り置きのをただ皿に乗っけたものじゃありません。
いやぁ、
パスタの量は男性には少ないかもしれませんが
２９００円で、このクオリティは安いですね。
薪焼きのビステッカは絶対に食べてみたいし
浜松町エリアが昼のメインですが
今年中あと何回か遠征して
ヴァッカロッサに行きたいと思います

いつもランチに利用して
コスパやばいなと思っていた
ヴァッカロッサ
今月で最後の営業ということで
伺いました。
食べたのはディナーコースで
肉をあかうしに変更
ランチはコスパやばいですが
夜になると
少し品質的に
他の優良イタリアンと比較すると劣るかなぁ
でも、良店でした。
好きな店が終わるのは悲しいですね。
