本日はこれからが旬のスッポン料理をいただきに赤坂にある「割烹 互閃」へ。
赤坂駅より徒歩５分程度。
こちらはスッポン会席がメインのお店。
季節によっては今の時期、鮎や鱧なんかも出たりする。
本日は「すっぽんコース」 15,000円。
以下、いただいた料理
・トウモロコシで作った豆腐、雲丹、キャビア、車海老
トウモロコシで作った豆腐でもっちりとしておりほんのり甘くて優しい味。
ここに雲丹、キャビア、車海老と強めの素材がのる。
・スッポン刺し
本日は１キロのスッポンを使っており、手前が心臓を２つに切ったもの。奥が肝。
どちらも漬けにしてあるのでそのままでいただく。
どちらも臭みは一切なくアッサリとしている。
つまみとしてもいいかも。
・スッポン幽庵焼き
スッポンの後ろ足の付け根の部分。
鶏に近い食感。
・イチジクとクルミ醤油
フルーティーなイチジクに香ばしいクルミ醤油がよく合う。
・鍋
前肩とエンペラ。
プルプルだけど身は淡泊。白身魚を焼いたかの様な感じ。
生姜が効いていて出汁がいい。
首は鶏で言うとせせりの部分なので細かい肉がついていてまた食感が異なる。
・雑炊
スッポン料理の醍醐味はやはり雑炊。
出汁も優しく旨みも抜群。
・水物
あづき、メロン、パッションフルーツ、プラムのスイーツで〆る。
酒もそこそこ飲んでお会計1人約2万円。
大将も物腰柔らかく落ち着いた雰囲気でとても過ごしやすかったです。
