虎ノ門ヒルズ駅よりすぐにある「虎ノ門 焼鳥國よし」。
オープンは2017年10月。
地下一階にある店内はコの字型のカウンターと個室あり。店内は活気あります。
店主の堀晋福(ほりくによし)さんはバードランド出身。2008年に独立し、焼鳥とベルギービールの「ホップデュベル」をオープンさせる。
こちら、コースは3つあり本日は「國よしコース」7,590円税込を。
鶏は京都の京地どりと山梨の甲斐路軍鶏を使用。
所々に修行先の面影が見えるが堀さんの個性も反映させたコース内容。大のお酒好きということもあって料理に合わせたお酒の提案もしてくれる。
以下、いただいた料理。
・前菜
伊達鶏の胸肉、花山葵醤油漬け、赤蕪。
・自家製レバーパテ
練馬区にある人気パン屋さん「パーラー江古田」のパンを使用。
濃厚で滑らかなレバーと仄かな酸味のあるパンは安定の美味しさ。
・マルハツ
内臓系に燻製醤油がまた抜群です。上のホースラディッシュでピリッとアクセント。
・京地どり胸肉の山葵焼き
ササミではなく胸肉なんだ。しっかりと火入れされ味もグッと深まってます。
・ちょうちんとハツモト
下はハツモト。トロンと濃厚。ちょうちんとハツモトって旨味の相乗効果しかない。
・京地どりのもも肉
江戸千住葱を間に挟んで。徐々に甘さが際立つ。
・キミノレバニラ
黄身にレバーと韮を絡ませ、日本酒でクイッとペアリングを。
・口直しのサラダ
春菊とセルバチコ(ルッコラの仲間)、金柑。
・焼きチーズ
バードランド定番のチーズ串。
イタリアのカチョカバロとデンマークのモッツァレラチーズを合わせて。噛めば噛むほど味が出るチーズです。
・芽キャベツ
・カラスミ海苔抱き身
オリジナリティ溢れる食べさせ方。
・つくね
中はトロトロ。
・追加 ソリ
パリッと、もも肉の味と旨味詰まった結晶。
・そぼろ丼
濃厚な黄身を崩し、実山椒がアクセント。
・デザート
お会計は一人13,800円。
バードランドを継承しオリジナリティあふれる食べさせ方で楽しませてくれる。虎ノ門で屈指の焼鳥屋です。ごちそうさまでした。
