中華そば 並
虎ノ門ヒルズビジネスタワーの裏手にあるこちら。営業は平日と土曜の11〜14時とハードル高めですがタイミングが合ったので訪問。入店すると店員さんから50分程待ちますとの申告。予習してきたので全く問題無し。初訪問なので基本の中華そばを購入。こちらは店内に待合室があり14人程の先客が待っていました。待つこと45分程で声掛けがあり着席。食券をカウンターに置いて暫し待ちます。卓上には粉山椒/黒七味/魚粉/白胡椒/ゆず果汁。飲み物はセルフで冷たい麦茶ポットがカウンター上にあります。
着席から5分弱で着丼。具材はチャーシュー2枚/雲呑/味玉半個/材木メンマ/ほうれん草/ネギ/海苔と特製といって良い充実ぶり。スープをひと口。最初は鰹節などの乾物系を感じます。そこにじんわり鶏のふくよかな旨味が広がる。無化調でこの旨味は凄い。自家製麺は中太ストレート麺はツルモチ食感。非熟成だそうですが、むしろムチムチとした歯応えです。具材もそれぞれ丁寧な仕事で高水準な美味しさ。上品な美味しさですがボリューム満点で並びも納得なお店でした。個人的には具材が少ない安価なメニューがあると嬉しいところですが。ご馳走さまでした！！
This ramen restaurant is run by two people, a Japanese cook and an Italian cook.This time I ordered soy sauce ramen. Even though it is a basic menu item, it has a variety of different ingredients.The soup stock is made from chicken, kelp, and various dried fish, and although chemical seasonings are not used, the soup has a rich flavor.
