仕事が終わり、早めのランチでもと赤坂のコリアン通りを探索していたら、低温調理を謳った看板を見つけたので階段を登ってみた。ドアを開けると美人さんの店員がにこやかに迎えてくれ、掘りごたつのカウンター席に案内。飲めるハンバーグが看板メニューだったが、昨日ハンバーグは食べていたから、季節メニューの鴨汁蕎麦を頼んでみたら、鴨肉は別盛りで、鴨汁は汁のみ。店員が言うには鴨やねぎは、出汁に漬けて食べて欲しいと。ふつうは、具材が煮込まれた鴨汁に蕎麦をつけて食べるのだが、低温調理した鴨肉やねぎはどんなものか?とひと口食べてみると、柔らかく、香ばしい。ネギもまた、焼き具合が丁度良く、口のなかにねぎの甘さが広がる。さらに、そばの味もそば汁につけて食べてみると、汁に鴨とねぎの味が溶け込んでバランスが良い。低温調理が鴨汁蕎麦を味深くしてくれているようである。
