蕎麦粉は、茨城県境町の新蕎麦、常陸の秋蕎麦など。
店で挽いている。
元気な女将さんが仕切っている。

■変わりそば
季節変わりの蕎麦で、10月は「しそ切り」。
紫蘇の風味が爽やかに香って、この蕎麦はあり!
蕎麦の表面は滑らかで、海藻のようなとろみがある。

切り方は細め。
コリコリしてかなりの歯応えがある。
■田舎もり
