【麹町】”鮨大和”
2023年9月にオープンされたまだ新しい寿司店。
店主は銀座の名店で17年研鑽を積まれたそうです。
(9のつくところ。笑)
夜のコースはおまかせ22000円のみ。
(握りのみのランチもあり)
夜はおつまみ〜握りの流れです。
おつまみは銚子の真鯛やノドグロなど素材の良さを生かした刺身メインですが、シンプルなのに抜群に旨い。
この日はお酒をあまり飲みませんでしたのですぐに握りへ。
握りは硬派な握り、といった感じでしょうか。
とても丁寧な仕事がうかがえます。
握りの大きさはお上品な大きさ。
マグロは赤身にトロ(2種)で3種提供されました。
口に含むとシャリがちょうど良くほろほろと崩れ、綺麗な余韻が残ります。
特に白身系の握りがここのシャリと合っている感じがして好みでした。
柔らかく歯切れが良い“スミイカ”や、心地良い歯応え、甘みを感じる“トリガイ”
穴子はツメと塩の食べ比べ。
それぞれ1貫ずつ！なんと贅沢な！！
握りは11貫。小さめの握りなので私的にはやや軽め？に感じました。
一斉スタートではないですが、非常にテンポ良くコースが進み滞在時間は1時間30分(?)ほど。
1人で伺いましたが気にかけてくださり楽しい時間を過ごすことができました。
ランチは予約なしでも入れるみたいです！
