黒い蕎麦
千駄ヶ谷駅の近くの蕎麦屋。地下にある店である。蕎麦は好物なので住まいから近くにある店は一通り試してみようと思っているのでその一環。
木を多用した民芸風の店内。夜は居酒屋にもなるのでテーブル席も多い。其れなりの広さである。
カウンター席に座り、胡麻蕎麦と鯖飯という組み合わせのランチを頼んだ。900円程だったかである。
此処の蕎麦は真っ黒である。胡麻を練りこんでるからだろう。胡麻は言うまでもなく健康に良いが相当量を纏めて撮るのは不可能なのでこうしたアイデアは良い。只、こうなると蕎麦そのものの香気は失われる方向に作用するだろう。蕎麦切りににしてあるから蕎麦という事は判るが、味そのものとなると蕎麦其の物の風味を味わいたい向きにはどうかとなる。
当方は、然程気にしない。偶にはこうした蕎麦も良いかなと思うだけだ。
付け合わせの鯖飯は、要するに鯖をフレーク状にしたものである。海苔と紫蘇があしらわれている。鯖の食感が感じられないのが残念である。もう少し賽の目の様に切ったものにした方が、食感としては楽しいだろう。
でも、総じてヘルシーな内容である。悪くない。

蕎麦屋で、上品な小料理を出してくれる店はそう多くはない。蕎麦前という言葉が使いだされてから、もう久しいが、意外と蕎麦屋でのそうしたものは、何処も彼処も同じ様なものである。尤も、老舗の伝統のある蕎麦屋は当然に昔からあるので、蕎麦を手繰る前の酒としてのアテは、その由来の格式が昔から息づいているので、海苔だとか浅利の佃煮とか板わさといったものになるのだが、それはそれで変わらないものを貫いているので、さっぱりした感じがする。
一方、小料理を散々食べて、ビール、日本酒を飲み、締めに蕎麦というスタイルで、蕎麦以外のものに力点を置く店はあまりない。あくまでも蕎麦が中心であるので、蕎麦が霞む様ではいけないということもあるかも知れない。
この、千駄ヶ谷駅に程近い店は、そうした中では料理も蕎麦もなかなかいける。久し振りに訪れたこの際は、筍の天ぷら、烏賊と菜の花のぬた和え、蕎麦刺し、鯛の刺身等、この際は3人で利用したのと若いメンバーは食欲旺盛ということもあり、色々酒肴を楽しんだ。日本酒の品揃えも充実している。決して安くはないが・・・ 締めはこの店の名物である胡麻蕎麦。黒胡麻が蕎麦の生地に練り込んであり、色も深い灰色である。胡麻の風味もする。店が奥に長い構造なので、スタッフの客に対する気配りに拙い処が散見されるが、店其の物は落ち着いた雰囲気で、上質と言えよう。
蕎麦も料理も食べたいとなると好適である。
