L'Octave Hayato KOBAYASHI, where you can enjoy sophisticated French cuisine cuisine from Chef Kobayashi, who was a sous chef at the famous French cuisine Restaurants L'Effervescence, opened in September 2015 and has been selected as one of Tabelog 's top 100 restaurants, receiving many compliments such as "Chef Kobayashi is a genius!". All of the dishes had delicious sauces and the delicately presented dishes were truly gourmet food, using ingredients from the autumn season that we visited. I was particularly impressed by French cuisine texture of my favorite shrimp and the juiciness of the Japanese Black Beef. The carrots and beets that were served with the red snapper from Yamaguchi Prefecture were also perfect for the autumn season, with autumn leaves and ginkgo nuts, creating a work of art on the plate that attracted the viewer. You can enjoy autumn with your eyes, and you can also enjoy autumn in your mouth. The chef's ingenuity is impressive, allowing you to enjoy one dish over and over again. Chef Kobayashi moved to France in 2006 and has trained at many star-ranked restaurants in France, including: Restaurant Jacques DECORET (now Maison Decoret)/Vichy, Restaurant Une Table,au Sud/Marseille, Une Auberge en Gascogne/Astaffort, Restaurant Mirazur/Menton, and Flocons de Sel/Megève.
