でも、鳥皮の仕込みは、福岡なんだそうで。
５日間にわたって、７回にもわたって焼くんだそうで。凄まじい手間ヒマ。
そして、なんでも、鳥皮の仕込みの値段が福岡だと、東京の半額なんだそうで。
鳥皮は５本で。千円弱の値付けて。安くはないw
味付けは、柚子ダレってのと、一味唐辛子とで、適宜。
小生の経験値が低いんで。鳥皮界における、この店の順番をつけたりは出来ないけど。なかなかに旨い。表面が、ちょいカリっとしつつ。なかのムニっと感も。
突き出しがてらのキャベツをチギッたの。
これも、ドレッシング替わりにと。柚子タレ、出汁醤油とかも、適宜。
と言いつつも、小生は、特段、なにも付けずに。一緒に食ってた鳥皮の塩味で
一杯目は、角ハイ。
ふたつ目は、自家製とおっしゃっるコーヒー焼酎をロックで。これが、結構、イケてた。
・味噌ハラミ。豚のハラミを味噌漬けにして焼いたのと。
この味噌ハラミってのも、福岡の名物だったりするんだろか。
・ボンジリ。脂がジンワリ滲む。カリっと感の仕上がりとは、ちょっと異なるテイストにしても。火の通し加減は、よく考えられてる。
最後、もう一杯。レモン サワー。
待ち合わした相手から、小生が予約した店に、もう向かってると連絡もあったことだし。そろそろ、行こか。
でも、鳥皮。コラーゲンたっぷり。美肌効果ってハズなのに。
少なくとも、お伺いした折、女性客皆無w それは、それで潔いのかもしれないけど。店員さんも、わりたイケメンだったし。やりようがあるんじゃなかろかとも思う。ガンバってねぇ。
