I don't like the kawada at Yakitori (grilled chicken skewers) because it's oily, but the kawada in Fukuoka is completely different. The skin of the neck wrapped around a skewer is soaked in the sauce over and over again, then layered and grilled over and over again, resulting in a juicy and crunchy result. Since the oil is gone, you can easily eat about 10 pieces. There are many Torikawa stores in Fukuoka in Tokyo, but I personally recommend the Nagamasa chain store. I think it's consistently delicious.
