季節のミスティカンツァ
バーニャカウダーのドレッシングでいただきます。中にまでドレッシングが回っていて美味しいです。
ヘーゼルナッツのフラン
フランと言えば本来は焼いたものですが、こちらは焼き上げる前のもの。そのため、とても滑らかでジャムやバターのようにパンにぬっていただきました。
本日のパスタ1 ホタルイカと飯蛸のアーリオオーリオ
ホタルイカとイイダコを組み合わせている店は少ないですがよくよく考えてみたら相性は抜群ですよね。大きさや色が近く、旬も被り、イカとタコなので当然味の組み合わせもいい。
このパスタでは形が崩れるほど火が入っていて、中のワタが溶け出し、ソースの役割を果たしていました。それに対し、イイダコは原型をとどめており、食感を味わうという別の役割を演じていました。
おそらくコラトゥーラが使われていてイタリア版の沖漬けのような味覚になっていました。
味は大変美味でしたが、ホタルイカは１匹だけ軟骨が残っていたのが気になりました。
本日のパスタ2 豚の挽肉のタリアテッレ
この値段のコースでパスタが２種類も出てきます。
こちらはよくある組み合わせで無難なおいしさ。
選べるセコンドピアット
豚肉か、サワラかの選択で豚肉を選択。
ポーションはそれなり。塩胡椒とバルサミコ酢のみの潔い味付け。
プリモに対して塩味が弱かったので、コースの構成を見直してプリモを弱めるかセコンドを強めるかした方がいいでしょう。個人的には後者推奨。
塩は肉の隣にセットしておいて、客に味を選択できるようにしてもよいかもしれません。
ドルチェ盛り合わせとカフェ
甘すぎず、それでもクリーミーで味は濃厚という私好みの味でした。
【総評】
以上、マイナスな点も少し書きましたが、トータルで見ると2750円のコースとしては信じられない味の良さと品数でした。お店の雰囲気も落ち着いていて居心地がよく気に入ったので、また季節を変えて訪問すると思います。
