飯田橋駅から少し歩いた辺りでやや殺風景な場所でした
メニューを見ていたら刀削麺の種類が豊富にあるのを見つけました
極太のもちっとした食感が刀削麺の魅力です
刀削麺の食感と辛さに惹かれて四川担々刀削麺を選択しました
赤いスープにひき肉、ネギ、葉物、すりごまが掛けられています
ひき肉は粗挽き
食感は良いが冷えているので都度炒めてるようではないです
麺は期待通り、もちっとした食感が楽しめます
そして、麺に絡むスープの辛さはマイルドなので食べやすい
ただ、スープにごまペーストは使われていないのか、コクはあまり感じられない
食べやすさにこだわったのかと解釈して頂きました
