神楽坂・裏路地にある一軒家イタリアンレストラン『トラットリア ラ タルタルギーナ』
漆喰塗りされた壁に美しい太陽のレリーフと黄文字でTORATTORIAと書かれた黒看板が目印です。
プーリア料理を基盤にしたナポリ、カラブリア、シチリア料理のお店。特注で作った高温窯で仕上げるピッツァは忠実にナポリの師匠の味を再現。
オーナーシェフは濱崎 泰輔さん。南イタリアのプーリア州、カラブリア州の複数店舗での修行経験を経て、銀座「ISOLAblu」チーフシェフに就任。2014年に独立し、神楽坂にタルタルギーナをオープン。
ベーシックなランチコース。前菜盛り合わせ、パスタ、カフェ付。
選んだのは、追加料金がかかる“ボッダルガ”のアーリオオーリオ。実はこれって、よくあるメニューですが、美味しいとは限らない、バランスの難しいメニューだと思います。
【前菜盛り合わせ】
「キャベツのマリネ」「ビーツのマヨネーズ和えサラダ仕立て、ウクライナ風」「メスコラーレ（かぼちゃとマスカルポーネ、レーズンを合わせクリーム状にしたもの）」「クラッカーにのせたのは、蜂蜜をかけたマスカルポーネチーズ」
「山梨のゴールドラッシュのとうもろこし」「グリッシーニ」
初めて聞いた「メスコラーレ（かぼちゃとマスカルポーネ、レーズンを合わせクリーム状にしたもの）」メスコラーレとはイタリア語で『混ぜる』意味。
【メイン】
「モチモチ低加水麺 からすみのアーリオオーリオ」
低加水麺のパスタをオイルと和え、仕上げにカラスミパウダーをたっぷりあしらった島風の一皿。彩りはシンプルだけどカラスミの塩気と旨みをもっちりした生パスタが吸って滋味深い味わいです。ちょっとオイリー過剰な気もしましたが、このくらいであれば現地のパスタにある意味近いのかもしれません。

「コーヒー」
ナポリ発の究極のコーヒー・ブランド「BORBONE（ボルボーネ）」
18世紀よりナポリにコーヒー文化を根付かせたボルボーネ王家から由来。
スタッフのお兄さんたちが、覇気が良くて気持ちの良い対応でした。途中でオーナーシェフがお店にチラリと寄られたようですが、さっと帰ってしまわれてしまいました。あとは現場監督に任せた、という感じでしょうか。シェフがお店に常駐する方もいれば、そうでない方もいらっしゃるようですね。
