◆出色の一皿 ホタルイカとカラスミのピッツァ
どの皿も南イタリアらしく
実際的で気取りのない味。
その中でも出色だったのが
400℃の特注ピザ窯で焼き上げたと云うピッツァ。
ホタルイカとカラスミのピッツァは
程よい厚みのふかモチな口当たりで、
ホタルイカの干し感ある凝縮とカラスミのパウダリーさ両方の旨みに
モッツアレラ・チーズのもきゅもきゅした食べ心地が加わり、
何とも食べ進む味わい。
具の旨みを肴に生地を味わうピッツァだった。

甘海老のフリット、グリーン・アスパラのスープ、
