今回のお店は【とんかつ憲進】さん。
飯田橋にありますは、
南阿佐ヶ谷の名店『とんかつ成蔵』の姉妹店『なりくら』の店主さんがオープンした
隠れ家的とんかつ屋さん。
場所は飯田橋駅から歩いて7分程。
軽小坂沿いにお店はあり、看板がある建物の2階にお店はあります。
時刻は12時ごろ。
この日は雨ということもあり、
街もひとが疎ら。
憲進さんは並ぶイメージがありましたが、すんなりと入店。
店内はカウンター席7席に、テーブル席が6席程の小さなお店です。
5月頃からランチメニューがリーズナブルになったとの事で訪問。
私は【米澤豚一番育ち ロースカツ定食】に【常陸の輝き 単品ヒレカツ】を追加でオーダー。
白いとんかつは低温でじっくりと揚げるので時間がかかります。
メニューは他にもエビフライやアジフライ、メンチカツ等があり、とんかつも銘柄が二つあり（ランチ限定がもう一つ）食べ比べも可能。
ご飯は大盛り無料です。
しばらく待っていたら白いとんかつが到着。
見るからにふわふわのとんかつ。
美味しそうだ。

★・米澤豚一番育ち ロースカツ定食 1800円
早速ロースカツを一口、、、
うわぁ！ふっわふわ！
これは美味しい！
本当に揚げているのかと疑わしくなるほどのふわふわな衣に、ジューシーな豚の甘さが滴るロースカツ。これは美味しいぞ。
甘めのとんかつソースとスタンダードなとんかつソース、塩、辛子がある。
キャベツはふわふわで、青じそドレッシングがあるが、ソースで食べるとなお旨い。
・常陸の輝き 単品ヒレカツ 800円
茨城県のブランド豚『常陸の輝き』を使用したヒレカツを単品で。
ヒレとは思えぬジューシーさと蒸し上げているかのような瑞々しい食感が堪らない。
甘さと旨味が濃く、ふわふわの衣との相性抜群。
epilogue〜〜〜〜〜〜〜〜〜〜〜〜〜〜
『成蔵』さんはまだ未訪問ながら、白いとんかつはかなり好きで色々と食べ歩いてはいるのですが、抜群に衣のふわふわ感が際立っていましたね。
表面部分の衣は、はらはらと崩れてしまう程柔らかい、けど、内側の衣それ自体はしっかりとしているというなんとも不思議なとんかつでした。
前半がうますぎて、後半少し重く感じる部分はありましたが、その辺りはご飯の量を調整すれば良かったかも。
白いとんかつは食べるスピード感も必要なのは悪しからず。
最高に美味しいとんかつでした。
