火曜日の13時半過ぎに訪問し、残り2席のカウンター席に座れました。お目当てのランチタイムリブロース定食は売り切れてました。気を取り直して、東の匠SPF豚のリブロース定食をお願いしました。リブロースは揚げるのに時間が掛かるみたいで、20分くらいで提供されました。来てみてビックリ、本当に白いんですね！ 木目の細かい衣の上に粗めでサクサクの衣を纏っています。まずはお勧め通り何もつけないで1口。うっ、美味すぎる❕ 豚肉が柔らかくて、みずみずしくて、脂が上品と言えるくらい美味しいです。衣に塩味がついているのかもしれませんが豚を引き立てていますし、食感も最高です。他の低温調理のお店も何軒か行きましたが、レベルが違いすぎます。次にピンク岩塩をつけてみると、さらに豚の脂が美味しくなりますね ソースも試してみましたが、最強のリブロースと、最高のとんかつには不要ですね。絶対にリピーターになると思います。ヒレカツや自家製メンチカツ、海老フライ等も食べてみたいと思います。成蔵から独立した店主のこの技を見せつけられると、成蔵にも行きたくなりますね
