2002年、東京・⻁ノ⾨に「そばの歴史を変えた」と称される⽇本⼀の⾏列店「港屋」が開業されました。黒く固い極太のそばに、⽢⾟く味付けされた豚バラ⾁がふんだんに盛られ、ラー油の⼊ったお汁で⾷すという唯⼀無⼆の世界観は、多くのビジネスマンや著名⼈の⽅々から溺愛されたのです。⽴ち⾷い⽂化に確固たる地位を与えたのも⽒の功績でしょう。2019年、突然に幕を下ろされましましたが、その全てのスタイルは現代⽇本の⾷⽂化に多⼤な影響を与え続けている事は⾔うまでもありません。
