近頃話題の「昆布水つけ麺」を注文しました。
昆布水には、産地にこだわった昆布•節•
貝柱•椎茸•塩を贅沢に使用。
昆布水と麺だけでも十分に旨みを感じれるます。
つけ汁は「塩」を注文。
動物系のスープをベースに浅利と煮干し、
節の旨みを加え、淡麗かつ深みのある味わいです。
薬味の柚子胡椒を加えると、個人的には尚美味しいと思いました。
