When you think of Yamagata Niku Soba, you think of cold Niku Soba. The room-temperature chicken stock and soy sauce soup is made with a large amount of chicken oil, making it quite thick and sweet and salty. The ingredients are simply stewed chicken and green onions. The soba noodles are smooth and chewy. It's a matter of personal preference, but this is Yamagata's cold meat soba. It is close to the taste of Kahoku Town. The interior is stylish and could be used as a bar at night. This place has changed stores 3-4 times in the last 10 years.
