I went to GAZZO, an Italian Cuisine Wine Bar near Suidobashi. Even though Italian Cuisine, it's ``Spice x Butchers'' charcoal-grilled Italian Cuisine. A butcher who specializes in Meat Dishes inspired by an "Italian butcher shop." From GAZZO LUNCH MENU “Ultra low temperature! I received ``Salted Lemon Roast Pork'' for 1,100 yen. As the name suggests, ultra-low temperature roast pork served with homemade lemon salt. Comes with mini salad, soup and rice. I can clearly see the pork being grilled from my seat at the counter. Is it my pork that I'm grilling now? My pork is cooked on the stove, not charcoal grilled. It is baked quickly and the chef cuts it with a knife. Since it said "cooked at low temperature", I guess it was cooked in advance and then lightly browned. My roast pork arrived with a beautiful pink cross section. There's no sauce on it, or rather it's seasoned with salt and lemon. I can't see it though! When you bite into the pork, the sweetness of the pork fat and the sourness of the lemon salt are delicious. The salt gives it a tangy taste. Simple and delicious. You can feel the flavor of the pork much more than when you eat it with sauce! The dish is served with something like miso sauce. If you don't have enough flavor, you can add more. It was roast pork with lemon salt that went with rice.
