Remarks

[What is the original brand chicken Xiang Chicken?] Xiang Chicken is an original brand chicken that inherited the lineage of the "Buff Cochin" that was used for breeding Nagoya Cochin (Chiang Kai-shek liked the taste and moved it from China to Taiwan) The original breed is chickens, for which there is an anecdote that they were brought into the area. Xiang Chicken has its roots in Hsinchu, northern Taiwan, which is famous as a treasure trove of high-quality chicken. The original breed was inherited in 1988, and the previous president, Yasuhiro Matsumoto, successfully bred it in Japan. In addition, because the chicken has less of the odor that is characteristic of chicken, it can be eaten in a way that brings out the flavor of the ingredients without much preparation. At our restaurant, we offer dishes that take advantage of the special characteristics of Kodori chicken.
