お客様の紹介で此方へ。本郷三丁目の駅近、バーガーキングのビルの3階ですが、看板は出ていません。エレベーターを上がると扉が一枚あってお店。1日1組の割に広い厨房。昔は1階から3階までお店だったらしいけど今は限定です。
1テーブルだけで出てすぐのテラスは喫煙スペース。禁煙が多い中でこの配置は嬉しい。
本日は23000円のコース。夜は12000円からとのことでかなり贅沢。
オマール海老も赤身の牛肉もホワイトアスパラガスも何もかも良かったけど、何よりびっくりした2品は最初のトマトのシャーベットと締めの焼き菓子。奥様に旦那様が日本のロブションで仕事をしていたとは聞いたけど、焼き菓子にも手抜き無し。
小さじ程度のトマトのシャーベットにジュレ。果肉がシャーベット、トマトのゼリー部分がジュレ。濃縮しつつ、青臭さなどトマトの悪い所を一切排除。これが素材を生かすということか。
締めの焼き菓子はレモンの香りをさせながら、ココナツを隠しに入れて引き締める。勿論一緒に出たマカロンも美味しいけど、シンプルな焼き菓子に技が光る。カフェラテでしっかりしまりました。
生からスタートして、白ワイン、ハイボールなど酒盃も進み、結局4人で12万円ほど。良い時間を過ごせました。
