最近上野近辺で飲んだ後の〆は王道家続きだったのでたまには気分転換で新しいお店にもという事で近所のわいずへ。本店は神田にある人気店です。
家系を謳ってないけどテイスト的にいわゆる家系ラーメンを提供してたその他にも二郎系っぽいラーメンなんかもありました。
スープはとろっと粘土がありしっかりとした獣感で近所の王道家のフレッシュな感じのはまた違ったテイスト。鶏油の香りはさほど感じず醤油はバシッと効いててなかなか厚みのあるややヘビーなスープです。
麺は平打ちでやや縮れてるのが特徴でスープに負けない風味もしっかりとある麺。チャーシューはしっかり食べ応えのある厚みの肩ロースが2枚。そんな強くはないけどスモーキーな香りを纏っていてしっとりと優しめな低温調理の火入れが家系としては珍しい気がします。
個人的にこのスープに低温肩ロースはちょっと重たい気がしました。海苔が1枚とほうれん草の量も控えめに感じたのでチャーシュー1枚にして海苔とほうれん草増やしてくれないかな…(笑)
この日はお腹の都合でご飯は頼まずラーメンのみにしたけど店内に張り紙があってご飯にも拘るってるとの事で次回はご飯も必ず頼もうと思います。
並びはなく空いてるので王道家じゃなくてわいずの選択も全然ありだと思います。
