As the name suggests, the signature menu is handmade large Gyoza / Dumpling. Each weighs approximately 55g, and is made with pork, cabbage, green onions, chives, etc. wrapped in a thick, chewy skin and grilled to a crispy and juicy texture. Chefs from China have adapted the flavor for Japan, with some adding green onion mayo, yuzu green onion, and garlic. Boiled Gyoza / Dumpling are also popular, with chicken broth stuffed inside.
