Kamo Shabusa Wadori Higashiueno newly opened on March 1st. Originally, the restaurant operated soba and Tempura under the name Shizuya-san. I visited here before during lunch time, and the handmade soba noodles and Tempura made with homemade flour are very delicious. Shizuya, the soba and Tempura restaurant, is open only during the day, and Sawatori serves duck shabu at night. Speaking of duck meat...I love duck meat, such as grilled duck, braised duck loin, and duck confit, so I've had many kinds of duck dishes, but this is my first time trying duck shabu, so I'm nervous. There are three types of courses without a la carte, but the one I chose is the standard duck shabu course, and the contents are as follows.・Soba tofu, fresh wasabi, buckwheat berries ・Kyushu chicken, boiled chicken skin ・Long onion vinaigretta and Hokkaido scallops ・Duck loin Steak and watercress salad ・Duck shabu Domestic duck meat, Kyushu chicken meatballs, vegetables, plate soba ・Soba noodles and soba ice cream to finish the meal.The first and second dishes were Japanese, but the third and fourth dishes were Japanese and Western dishes that would go well with wine. The main dish is duck shabu, but the staff will first make the meatballs right in front of you. He explained in detail how to eat duck shabu, and explained that it only takes 15 seconds to cook the duck meat. Duck meat doesn't have the unique taste of duck, so even people who don't like duck meat can eat it. It's juicy without being dry and very delicious. Of course the duck meat was delicious, but I was surprised at how delicious the vegetables were. There were various types of vegetable platters, but I was personally impressed by the seri, which was so delicious. As expected, they sell not only meat but also vegetables. There are two types of dipping sauce: ponzu sauce and miso sauce. The miso sauce was Saikyo miso and had a light flavor, but the meat and vegetables were so delicious that it was delicious even without adding anything. (Maybe it's because the pot is made with fragrant bonito stock, so it's delicious enough to make you feel like you're paying close attention to it.) Also, it comes with a whole yuzu for flavoring, which is a luxury. The soba noodles are from Shizuya. It was light after the duck shabu, and the amount was just right. The final dessert was served with soba chips, and the lineup made you remember the existence of soba from the first item to the last. As a drinker, I was very grateful for the extensive alcohol menu, and although I chose Japanese sake this time, I would like to enjoy my meal while drinking wine next time. The atmosphere of the store is chic, so I think it's perfect for spending time with your loved ones. I would definitely like to visit you again.
