Lunch on this day started at 1am and ended at 3pm (last order 2:30pm), which was quite tight. The Asakusa underground shopping mall is tinged with the Showa era, with its suspiciously dim lighting and exposed ducts, pipes, and electrical wires in the ceiling. At Fuku Yakisoba (stir-fried noodles), a restaurant serving yakisoba with sauce, there were already elderly people drinking. Authentic was full just as it opened, so he takes everyone's orders and makes them all at once, but since he is the only one operating the restaurant, the wait is quite relaxed so I don't recommend it for people who are short on time. The chef also said that it is almost impossible to make two rotations. ■Bo Bia (1 bottle) 600 yen ■"Original" minced pork with lemongrass and minced meat rice (mini) 600 yen ■Special Seafood pho (less noodles) 1500 yen In addition to the regular menu, there was a New Year's special on this day, and after some deliberation I decided on an order that wasn't much different, but everything was excellent. Bo Bia uses jicama, which is rare in Japan, to create very fragrant fresh spring rolls, stuffed with herbs and other ingredients and made to be crunchy and chewy like kimchi. The homemade peanut miso sauce is also delicious and goes well with anything. The minced pork rice topped with fresh coriander is a crunchy dish where the lemongrass and slightly garlicky flavored juice permeates the jammin rice. It was delicious, as expected of a "specialty." Seafood pho, with its strong clam and mussel broth, is full of coriander and bean sprouts, and is completed with lime and red chili peppers. I drank it down to the last drop. I ordered less noodles as recommended by the chef, but I think I would have been fine with a large serving. It's even more surprising that all of this is made without artificial flavorings. It's worthy of calling it authentic.
