2001年8月、台東区根岸で店主の一軒家を改装してオープンしたステーキ懐石「定谷」。
屋号にもなっているシェフ定谷豊氏は、老舗とんかつ店「宇田川」などで修業したその道40年のベテラン。
メニューを設けずその日ごとに旬の食材を用いるスタンスで各界の著名人も足繁く通うそうだ。
基本的に完全予約制なので事前に連絡をいれてランチで伺った。
【雰囲気】
1階はオープンキッチンのL字カウンター10席程で2階にも個室席を用意。
洋楽BGMがゆったりと流れるアットホームな雰囲気だ。
【コース(15000円)】

全体を通して凝った調理法はなく、高級食材をシンプルな味付けでストレートに愉しむ構成。
最も良かったのが牛タン。茹でたものを炭火でさっと焼いているが、サクッとした歯触りにホロホロと崩れる食感。
塩味が素材の旨味を引き立て、じんわり脂の甘みが広がる。一緒に添えられたカイワレの食感と山葵の風味も合っていた。
逆に期待外れだったのが牛ステーキ。まず皿にべったりと付くくらいにサシが強すぎ。焼き加減はレア目だが、表面に香ばしさが足りず香りも弱い。
また甘めのソースがしつこさに拍車をかけ、付け合わせのトマトも相性が良いとは言えなかった。
グラム的には150g程度だろうか。ここからカレー、チーズケーキと畳みかけるのでかなりヘビー。箸休めを入れるなど、もう少し緩急が加わると良かった。
【サービス】
マスターとマダムの2名体制。
壁にかかっているサインは誰のものかと眺めていると「原(G監督)さんのサインです」とマダム。なんでも監督初めジャイアンツの選手が時折訪れるのだとか。
一見職人気質で寡黙なマスターだが、同じ熱心なGファンということで話が盛り上がった。
サービスに関しては皿を下げるタイミングが早すぎるのでもう少し余裕があると良かった。

ランチでもうワンランク手頃なコースがあると使いやすい。
【総評】
ステーキ懐石というのは語弊があり、実際は豪華食材のオンパレード店。
肩肘張らずにガッツリ頂けるのでファンが多いのも納得である。
「ジャイアンツが日本一になったらまた来ます」と言ったので近々再訪せねば。
