千駄木鮨隆さんに訪問した。
店内は人で賑わっていて、普段なら落ち着いて飲めそうな雰囲気なのだが、活気づいているのでこのほうがお酒もすすむ気がした。
カウンターに座り、おまかせコースを頼んだ。
ほぼ満席の中で、常に料理のだすタイミングをはかる店主の木村隆児さんは、所作に無駄がなく、最短で仕上げる。
見入ってしまうという意味では、一種のパフォーマンスである。
スタッフは店内に3人、奥で1人ほど。陣頭指揮をとるのは、店主の務めである。
大抵こういう場面で、器の大きさが知ることができる。
料理に侘び寂びを感じる。お酒との相性もよい。
しみじみと、料理に向き合えるのは、至福なことだ。
