「やぶ」っておそば屋さんには“やぶ”と、漢字で“藪”と、そして“藪そば”っていう、それぞれに異なる系譜があるんだって、ぼくの親父が言ってたのかなぁ ? だとしたらまるで信用出来ない話だけど ……
朝方の雨はあがっていたが、天は厚い雲、地も塗れ光るアスファルトに依って、町はより鈍色を増している。
京葉道路を錦糸町方面とは逆に西へと進んでいくと、見慣れたヘンタイが目に飛び込んで来た。まさかここで出逢えるとは思わなかったヘンタイに強く心を揺り動かされ、一方諸々妖しげではあったものの、店頭に停めてある出前のカブだけを信じて勢い暖簾を割っていく

「やぶ」
“やぶ”のヘンタイ(変体)仮名は、“や”がほとんど崩れていないのでどちらかというと分かり易いと思う。
引き戸を引いて首を突っ込んだところ、給仕の女性から警戒の眼差しで出迎えられるが、いくら早い時間とはいえ営業中、何かのセールスマンと勘違いされたのかも知れないが、いちお笑顔で「いらっしゃい」してから、そのあとで臨機応変するのが商売の構えと思うのだけれど ……
店内は座れる立ち食いそば屋に毛が生えたくらいの、まだ出来てか改装してか、そんなに年月が経っていないように見えて小綺麗であり、その窓際の2人掛けの卓に陣取らさせていただいた
“合わせ丼 小かき揚げ丼と小もり” @980也。
おそばはつめたく締められており、小諸そばより状態は良く、ゆで太郎さんのおそばに匹敵していると思う。
筒状のかき揚げは注文してから“揚げsound”が聴こえてきたので揚げたてか、または一度揚がっているものを再度揚げて温め直したものか(こらっ !)。確かにさくさくなんだけど、茹で場のご主人が入念にどんつゆを回してくれたのは見えていたが、東京人の要求する甘辛さには達していないかな。一方でそばつゆはきっちりとした鰹感を纏っていたけど。
そして終始mysteriousであったことは言うまでもなく、“やぶ”を名乗っていることなんですけど、こ～ゆ～おそば屋の屋号って、例えば脱サラしておそば屋を営るときに、勝手に“やぶ”とか“砂場”とか付けちゃっていいものなのかなぁ ?
例えば“やぶ”だったら笊をひっくり返した上に一人前の1/4程度の盛りで、大盛りは決してやっちゃいけなく、つゆの塩分濃度はふつうのつゆの5倍以上でなければならないとか(笑/いくらなんでも5倍はないんじゃない ?)、“砂場”だったらフロア面積当たりの花番さんの密度をふつうのおそば屋の3倍以上にして(笑)、お客さんの一挙手一投足を絶対に見逃してはならない ! とか、そ～ゆ～基準を満たした上で初めてその屋号を与える国際認定機関みたいなのが、ユネスコみたいなのがないのかなぁ ? て ……
その辺り、もう誰でもwelcome ! な「満留賀」さんはえらいよね ♪
というのは冗談で、実は「満留賀」さんのおそばは「やぶ」(の統一感。言いかえてばらばら感)以上に、揃って大衆寄りという奇妙な統一感が保たれているのが不思議なんだよなぁ。そういう意味では、屋号とお店の佇まいがどのお店でもかなり一致する、ということがえらいよ
