蕎麦は色白の更科
香りは弱めだが
冷水でしっかり〆てあり
シャキッと良い喉越し
ボリュームは控えめ…
蕎麦つゆは甘さ控えめで、江戸前の味では無く、
上品な小料理屋の出汁の味
蕎麦の香りが弱いので
つゆにドボンと浸して
出汁を味わう蕎麦という感じ。
セットについてくる、一口サイズの小料理が旨い。
ランチタイムの訪問だったが、これらを肴にちびちびやりたくなりました。
それよりも
ランチタイムに空席が目立つも、全て「予約席」で、
来る客来る客、断っていたのに驚きました。
それと、従業員の動きの悪さが目立ちました…
（何をするにも、いちいち厨房にいる男性に確認。お茶のお代わりも蕎麦湯も言わなければ持って来ない）
余計なお世話かもしれませんが…
ランチタイムは予約を取らずに、回転率を上げた方が良いのでは？
それらのシステムの帳尻合わせが、価格に反映されているのだと感じました…
