ニホンジカのビステッカや自家製サルシッチャ、うずらのローストなどの肉料理も絶品だったのですが、ここのジェノベーゼ、かなり美味しいです。。。
■カルネセットにて、「本場のジェノベーゼソースの手打ちショートパスタ"トロフィエ"」を選択。その他ワイン、ドルチェ等。
これだけ熾烈で、迫って来るかのようなバジリコの香りは久しぶりです。ペストはもちろんお店の手作り。ただしモルタイオ（乳鉢）調理ではないとの事でした。
酔っていて見間違いだったら申し訳ないのですが、フライパンにトロフィエとペストを入れて火を通してから提供していました。熱が入ったにしては強烈ともいえるバジリコの風味（香りが飛ばないようにパスタとソースを混ぜないで提供する店もあるというのに）。提供直前に火を通すと、花が開く様に、より香り立つ状態になるという事なのかなー、調理を全くしない自分にとっては謎。色もキレイなヒスイ色でした。
レビュアーさんの一文にも、春菊のパスタに対し「火入れしてもこの色と苦味も無くて、少し甘味も感じられるくらい…」との表記あり。いやー、もうとにかく美味しい料理を出してくれるシェフの技術力と探求心はすごいです。自家製の料理をたくさん出してくれるのも嬉しい。
お店は小岩駅から徒歩数分。小岩といえば思い出すのは、生前に伯父さんが農業をやっていた事ですね。今考えると、職人的な探究心があったような人に思います。レストランに野菜を卸すハシりのような事をしていたのかな、なんでも、あるレストランのシェフが突然、伯父さん家に訪ねてきて、「パセリを仕入れさせてほしい」といったような事があったらしいです。その話を初めて聞いたときは「パセリにまでそんな気を使うのが料理人なのか!?」などと思ったりしてしまいました（パセリのソースがポピュラーなのを知ったのは、ずーっと後の事）。
残念ながら、跡取りの息子さん（つまり従兄弟）はある分野の医者になってしまったので、もう農家はやってません。
伯父さん家の丹精込めて作られた作物で、ここのシェフの腕前で提供される地産地消の料理は、どんなに美味しい事だろう、などと妄想にかられながら店を後にしたのでした。
