灯りに誘われ
通りに面したガラス戸から灯りが漏れて、入り易い。
ご主人ひとりで、全て仕切られていますが、動線に無駄のない造りになっているみたいで、サービスも行き届いている。
お願いしたのは、はつ、肩ロースと忘れてしまった、もうひとつの部位のミックス、上シロ、のど(豚の声帯)、レバー、ねぎと飲み物にビールとハイボール。
どれも、丁寧な下処理がされているのだと思います、
炭火での絶妙な焼き加減、特に、上シロは、数量限定みたいで、自分が最後だったようですが、上質の脂が溢れ、レバーもふっくら、しっとりで、経験した中で最上位。
ねぎだっておいしい。 煮込みも食べたかったけれども、お腹も良い加減だったので次回の楽しみに。
幸せな夜でした。

先日、気になった煮込み。 見た目は、普通と思ったら、柔らかく、コクのあるもつは、胡椒がかなり効いたピリピリあっさりスープに包まれて、へぇー、面白い、そしておいしい。 定番の七味を振りかけようとしたけれど、全く、不要。
そして、たっぷりの辛子で、レバーの塩、ししとうと、つくね、ハツを。 それぞれ、ボリュームがあって、満腹に。
時間が静かに流れていきました。
