豆腐を滝川に見立てた涼を呼ぶ夏の一品滝川豆腐から始まり、疫病除けのお札「蘇民将来子孫也」が飾られた前菜、透き通るようなアオリイカ等新鮮なお刺身、ふっくらとして柔らかな太刀魚の塩焼きまでが一品料理。野菜サラダを挟んで、いよいよ名物で創業以来守り継いでいる伝統の鶏の水炊き。具材は、徳島阿波どりと北海道産小玉ねぎのみという潔さ。うまみを存分に引き出された水炊き、濃厚な水炊きスープ、そのスープの旨味を活かした雑炊と至福の時間が流れていきます。デザートは、夏らしくさっぱりとしたシャインマスカットのゼリーとわらび餅。
創業八十余年となるつきじ治作には、現代では叶えることのできない、古き良き時代の瀟洒な贅沢が息づいているようです。都心の喧騒を忘れさせてくれる空間で、一子相伝の「水炊き」をいただく贅沢な機会をいただきました。
