初めてお伺いした新富町の湯浅さん。
友人にオススメしてもらい、新規開拓しました。

ベースとなるのは中華料理。
湯浅シェフは銀座の「筑紫樓」、赤坂の「桃の木」などの名店で修行をされた方です。

この日はお任せコースに上海蟹を追加してオーダーしています。

まず印象的なのは、お店のスペシャリテである酢豚。
酸味が抑えられ、豚肉の旨味を引き出すことにフォーカスされた構成です。

他には牡蠣の茶碗蒸しも驚きの一品でした。
酸辣餡を合わせることにより、牡蠣のミネラル分と相乗効果が生まれ、最高のバランス感に仕上がります。
