無化調の和風ラーメン
東西線木場駅から徒歩20分ほどの所にある
和風ラーメン金子さんへ。
もう何度も伺っているお店。
和風ラーメン＋半チャーハン900円を注文。
和風ラーメンのスープは動物系、昆布、煮干、
かつお節、あじ煮干、あご、するめ、干椎茸、
野菜などで出汁をとっている。
無化調でありながらしっかりと出汁がきいている。
上品で優しい味わい。
無漂白の穂先メンマは手間をかけて塩抜き
されている。
半チャーハンはなかなかの量。
やや薄味でふわっとした仕上がり。
チャーハンも美味。
そしてこちらのお店は手作りの漬物がセルフで
いただけるのが嬉しい。
いつも数種類用意されている。
立地は決してよくは無いが丁寧な仕事ぶりが
うかがえる隠れた名店。

数年ぶりの訪問。
和風ラーメン＋半チャーハンのセット
900円を注文。
自家製モヤシナムルとぬか漬けの
小皿がサービスでいただける。
スープは鶏ガラ、煮干し、鰹、昆布などが
使われており無化調。
醤油の尖りもなく優しい口当たり。
滋味深くほっとする味わいだ。
中太縮れ麺は柔らかめのゆで加減でスープ
との相性もよい。
チャーシューはホロホロ崩れる柔らかさ。
チャーハンはあっさりした味付けでパラパラと
しっとりの間ぐらいの感じで美味しい。
丁寧な仕事が感じられるラーメン屋さん。
