知人の貸切会に招待いただきました。
どうやらこのお店のパスタが本当に絶品とのことで、幹事のリクエストによって、11種類のパスタが提供される驚きの会になりました(通常だと3-4種類)。
コースを食べ切った印象
「良質な食材を生産者から仕入れて、香りを最大限まで引き出した絶品引き算パスタ」

→帆立貝のヒモから取ったソースを出汁にして。塩は一切使っておらず、帆立貝の旨味と温泉水にて塩分調節。素晴らしい一皿。
・和牛テールの白ワイン煮込みのラガーネ
◎イタリア産グリーンピースのマッケロンチーニ
→日本産にはないグリーン柔らかさと甘みが素晴らしい。
◎オランダ産ムール貝白ワイン蒸しのフレーゴラ
→この日最も感動したメニュー。通常はオランダからムール貝を真空で輸入するところ、日本の生簀で再度育て直した生産者のものを使っているとのこと。別格のムール貝の香りと旨みの素晴らしさに衝撃を受けました。
・ホワイトアスパラガスカルボナーラ
・ジェノベーゼ
→あえてフードプロセッサーでバジルを砕くことで、色味も大切にした一品。
・米沢牛内臓とンドゥイヤのトマトソースパスタ
◎菊地源吾牛A3サーロイン
→ 肉質がとにかく素晴らしい。こんなに美味しい牛肉を久しぶりに食べました。菊地源吾牛は人と牛の健康を考えて作られた牛肉のようです。
ビジネスのために不自然にサシを入れまくられて、A5とった牛肉が高評価される現代が不自然かか改めて考えさせられます。
脂の舌の上でのとろけ方やお腹での残らなさ、赤身の濃厚なうま味が感動的。
