結論、再訪はないです
餃子は野菜の優しい味わいを活かしていて食べやすいです。ラーメン屋や中華のパンチの効いた餃子をイメージすると肩透かしかもしれません
ラーメンは、無化調の醤油を選択
無化調であれば中々エッジを立たせるのは難しいかと思いますが、もう少し踏み込んでも良いかなと
鯖節とかをもっと効かせて出汁としてのベースアップをはかるのはそうだと思いました。また、カエシが弱いのでもう少し出汁系の素材と合わせて旨味を引き出したり、醤油を重ねて深みを出すと良いかなと思いました
ただ、この平たい味付けと薄味、出汁を狙って作っていて、これがウケているという世界なんだとすれば個人的な好みが合致しないだけということもあるかと思いまして3.0でした
