【1枚目】
「黒毛和牛」
メインは群馬県産の黒毛和牛のランプ肉を使ったロースト。
ランプは牛のおしりあたりにある部位の肉で、脂肪分が少なく、赤身の旨味と風味が強いのが特徴。
今回いただいたローストも、噛めば噛むほど肉の旨味が強くなるのがとても印象的であった。
また火入れもとても良く、表面はしっかり目に通っているものの、赤身の柔らかさは失われないようにされていた。
付け合わせは蕪、じゃがいも、エリンギ。
特にじゃがいもはかなり甘めのグラッセのようになっており、クセになるおいしさであった。
【2枚目】
「ピュアホワイト」
1皿目のアミューズとして提供して頂いたピュアホワイトを使った一皿。
ピュアホワイトとはとうもろこしの品種の名前で、『白いとうもろこし』としてもとても有名になっている。
そんなピュアホワイトはとても甘味が強く、周りにまぶされた粒だけを食べてもかなり美味しい。
そして中心にあるムースはそんな甘味の強いピュアホワイトをふんだんに使ったもので、甘さとコーンのいい香りが鼻を突き抜ける。
隣に添えられたのはイタリア産生ハムを巻きつけたグリッシーニ。
生ハムとグリッシーニの塩気とピュアホワイトムースの甘味の相性抜群。
見栄えも良く、味覚だけでなく視覚でも楽しめる一皿であった。
【3枚目】
「カンパチ」
鹿児島県産の天然のカンパチを使用した冷前菜。
カンパチ、トマト、イクラ、紅芯大根などをガーリックアイオリソースと和えた一品。
ガーリックアイオリソースは、ガーリックとオリーブオイルのの良い風味をマヨネーズのまろやかな口当たりが包むとても美味しいソースで、さっぱりとしたカンパチともよく合う。
周りに掛けられたカラスミの塩気を少しかけてあげると、また違った表情を見せて、食欲をさらにそそる。
【4枚目】
「白鱚」
温前菜の白鱚(しろぎす)を使ったフリット。
しろぎすは雑味がなく、とても食べやすいのが特徴で、さっぱりとして引き締まった身とサクサクのフリットの食感の対比が楽しい。
また、骨もカラッと揚げられており、そちらもスナックのように食べることができる。
付け合わせの万願寺とうがらしのフリットも非常に大きいもので食べ応え抜群であった。
ソースは桃のソースとバルサミコを使った特製クリームソースで、まろやかな口当たりでも後味はさっぱりとしており、フラットがとても食べやすくなる。
【5枚目】
「生雲丹」
パスタは北海道産の生雲丹を使ったペペロンチーノ。
雲丹を使ったパスタというと、カルボナーラなどのクリーム系が多いが、こちらはペペロンチーノでの提供。
雲丹の風味をしっかりと楽しめるという点で、ペペロンチーノはとてもよく合う。
またベースにはアサリの出汁を使っており、ペペロンチーノでありながら、和風の香りも感じられ、コースの終盤でもサラりと食べられてしまう。
【6枚目】
「バースデープレート」
この日は誕生日のお祝いということで、デザートとして豪華メッセージプレートをご用意して頂いた。
メッセージプレートはケーキやアイス1種類にメッセージということが多いが、こちらはなんと全6種類のデザートとたっぷりのフルーツを提供して頂ける。
その大きさに正直かなり驚いた。
ミニサイズではあるが、どのデザートもクオリティが高く、大満足な内容であった。
【まとめ】
お台場海浜公園駅からかなり近くアクセスは抜群だが、店内はとても落ち着きのある雰囲気抜群のイタリアンCARESSさん。
ディナータイムはバーのようなお洒落な空間で、まるで海外のレストランかの様な雰囲気を醸し出す。
テラス席もあり、晴れた日のランチタイムは外で気持ちよく食べることも可能。
スタッフの方の対応もとてもよく、非常に気持ちよく食事ができる。
また必ず利用したいと思える、とても満足度の高いレストランであった。
