浜松町に来た。
出張だったがキャンセルになったので散歩をすることに。
11時。腹空いた。。。。
でも最近は少し食べ過ぎだから 蕎麦か何かにしようか。。。
歩いていたら美味そうな店構え発見!
食べログなどでは調べず入店とする。
もう結構なお客さんがいる。2階席もあるようだ。
私は一階中央の大きめのテーブル席に案内される。
麦茶が提供される。ヌルメなのが残念。
メニューを見る。
かなりこだわりの蕎麦屋のようだ。基本は二八蕎麦らしい。
挽きぐるみの10割もあるようだが、基本の蕎麦にしよう。
蕎麦の風味を理解するには種物は不要。
盛蕎麦 大盛り 830円
周りのお客さんは天ぷらそばやセット物を注文している様子。
5分くらいでやってきた。
何度も書くが私は蕎麦打ちをする。最近は10割が多いが昔は二八だった。東京のそばはつけ汁美味しいから楽しみだ。
まずは蕎麦のみで。うん風味があっていい。冷水で洗った後 聢りと冷たく締めているのがいい。食感が豊かになるからだ。
次にそばつゆを半分くらいつける。やはり半分くらいが丁度いい。少し濃い目で甘い風味のつけ汁。すべてつけちゃうと風味が減ってしまう。半分くらいにするのがそばの風味 汁の風味を同時に楽しめる。
一気に食べてしまった。
最後に蕎麦湯。美味い。
東京の老舗で830円でこのそばが食べられるなんて。。。驚きだ。
カツ丼とかも美味いんだろうな。この汁を基本にしてるのかも。
