創業はまだ江戸時代の文化・文政期（1804年～1830年）。約200年続くという超老舗寿司店『すし処 宮葉』さんへ。
先行レビュアーには「シャリが甘い」、「シャリが小さい」等の口コミを見かけますか、実際に食べるとそうは感じません。シャリは酢や塩が穏やかで柔らかめ。大きさは板前さんが最初に希望を聞いてくれます。
そのシャリは高温耐性が強く粘りが少ない事から寿司飯に向くという「笑みの絆」を使用し、3種類の酢をブレンドしているそう。

いきなり夜だと敷居が高くて躊躇しますが、ランチコースなら気軽に行けますね。この日も30分余りの短い時間でしたが、老舗の雰囲気の一端に触れる事が出来て良かったです。
