仕事の帰り友人と連れ立って、1年前に予約したこちらのお店に初めて寄せて頂きました。
お料理は、おつまみ5品ににぎり/巻物9品とあおさ汁に玉子。お酒は二人で小瓶1本と日本酒を4合頂きました。おつまみはどれもひと手間かけた品で、にぎりは強めの赤酢に合う濃厚な魚が多く、それほど品数が多い気はしませんでしたが、お腹いっぱい頂けました。
・刺身3種(はた、カツオ、貝柱)
→脂ののったハタが絶品。
・白子とブルーチーズ&わさび
→トロリ濃厚な白子がブルーチーズの塩味・香りを纏い旨し。
・赤ウニ、あん肝、カラスミ
→この時期希少な赤うに。さらりと濃厚で絶品!あん肝は少し甘めに煮付けてあり旨し。自家製カラスミも日本酒が進みます。
・ブリxoジャン
→氷見のブリしゃぶをXOじゃんソースで中華風に。ブリは程よい脂で美味しく頂けました。
・金目鯛とじゃこ&ウニごはん オリーブオイルがけ
→よく混ぜ合わせ、初めにオリーブオイルの香りがふわっと立ち上がり、強めの赤酢ごはんにうにの濃厚さが程よく混ざり合い美味しく頂けました。
・平目
・中トロ
→個人的には一番美味しかったマグロ部位。背びれそばの身とのことで、脂も綺麗で筋もなく素晴らしく美味しかったです。
・赤身
・イカ
・マグロ醤油漬け
・いわし
→3時間酢漬けされ骨も溶けたイワシと強めの赤酢ごはんで酢を中和させることなく相乗効果的な尖った一品。
・大トロ
→2週間熟成し香りを残すため、少し黒ずんだ表面部分を残してより旨みの強い大トロ。旨し。
・バフンウニ
→山盛りのバフンウニが口いっぱいに口福感をもたらす最強の一貫。
・あおさ汁
あおさのお味噌汁でひと息。
・とろたく巻き
→大量のマグロにとびっこと沢庵の食感が効いた贅沢な一品。旨し。
・玉子
→多少しっかりとしたほぼカステラな卵焼き。
・飲み物
→ビール小瓶と日本酒(醴泉(スガ弥ver)、東魁盛、義侠、惣邑、美丈夫)。
以上、気軽には難しい感じの¥70,260/人でした。
