小豆島にホテルを持ち、瀬戸内の食材をメインに自社のオリーブ畑や葡萄畑を持ち、内装も自社設計事務所が手掛けている随所に拘りが詰まった店。足を踏み入れた瞬間の木の香り、木の温もりも素晴らしい。日光の神木をフロアの中心に据えている。
スタッフの皆さんのもてなしもホテルライクで素晴らしく、味も最高に美味しい。
料理にワインを合わせるように料理にパンをマリアージュさせている。この日は魚料理に海苔と生姜のパンを、魚料理に胡麻と山椒のパンを合わせていました。
どの料理も素敵な器で、ソースも最高に美味しく食材を引き立てている。目の前で仕上げられるデザート、
食後のハーブティーもフレッシュで、お抹茶立ててくださり、心まで満たされた時間だった。この店は、もっと評価されるべきと思う半面、人に知られたくない自分の店にしておきたい場所だ。行けば分かります。
