I visited on a weekday around 9pm. When you enter the restaurant, there is a ticket machine where you can purchase a meal ticket. There are high chairs like those found in cafes where you can sit. There is no need to present the meal ticket, just go and get your udon when your number is called. The owner calls out the numbers like the wind, as if he is used to it, so if you are not a regular customer, you may not be able to hear him. You can help yourself with ginger, fried tempura bits, etc. There was a sign on the wall saying that you can change the flavor midway through your meal.
