Beef offal has about one-third the calories of beef short ribs, but it is rich in collagen, which helps retain moisture and create firm, fresh skin, as well as making bones supple and strong. You can also expect good results. Furthermore, beef giblets that have been properly Motsu-nabe (Offal hotpot) to make giblets have had all the excess fat removed, making them a low-calorie yet high-protein ingredient.

Horse sashimi, which is our signature menu next to offal Motsu-nabe (Offal hotpot) is ordered from Kumamoto.
