As usual, I followed my rule when visiting a restaurant for the first time and ordered the first dish on the menu, "Ran" (3,850 yen including tax). First, Small dish was brought out, and on this day it was octopus with butter. The octopus was cooked just right and was soft. The flavor of the butter was also good. I felt my expectations rising. Next was the egg roll. It wasn't too sweet, so it would go well with sake. It's a shame that I couldn't drink it because I was working. After finishing the meal, I chewed on the pickled ginger and had a sip of tea, and then the next topping was served. The rhythm was perfect. The rice was at the perfect temperature for body temperature, and the toppings were cut with fine knives, and each step was done carefully and with care. The contrast between the chef, who looks full of energy, and the way he does such delicate work was also nice.
