Mark’s Tokyoは、目黒駅から目黒川に向けて歩いて行ける距離にある。8人掛けのカウンターとテーブル2卓の店をシェフを含めて3人で回している。我々はカウンターに座った。
シェフの自己紹介によれば、シェアは日本人とイタリア人のハーフで、かつアメリカで生活していたので、幾つかの国の影響を受け、かつ日本の食材を使った料理を供している。お任せのコースにした。
野菜のスープは印象的だった。白菜やキャベツを丁寧に漉している。出汁は昆布にドライトマトを加え、微かな酸味を湛えている。オリーブオイルや塩がアクセントを付け、味の組み合わせが良く考えられている。
帆立貝はやや深めの火入れ。アラレや甘夏など意外な素材で食感に変化を付けている。
フェトチーネは、腰を残して茹で方で、空豆やトウモロコシで爽やかな味付け。
豚のローストは素材が上質。付け合わせのマッシュポテトは丁寧に漉してある。
アイスクリームは堅実な味。
お勧めされた目黒区のクラフトビールは、とても美味しかった。ワインはカリフォルニア産が多そう。
カウンターに座ると、シェフが丁寧に料理を説明してくれる。語り口が料理への愛を感じさせる好青年だ。
